Warm Summer Salad & Sausages

I'm a busy mom, so I always have a few quick meal options in my fridge.  Today was one of those days, and we got home just before supper time.  No problem...cut up a few veggies, heat up the sausage, add a side of fruit and voila...Supper!

Warm Summer Salad

1 zucchini cut into small pieces
1 white onion sliced
2 scallions chopped
1 cup frozen green beans
1 yellow pepper cut into pieces

Heat olive oil in a nonstick skillet on medium high heat and cook veggies slightly so they are just starting to brown but still have a little crunch.  Place in a bowl in toss with the vinaigrette.  Serve warm or cold. 

Vinaigrette

1 tsp dried garlic powder
1 tsp dried parsley
1/2 tsp dried basil
1/8 tsp pepper
1/4 tsp salt
2 tsp rice vinegar
1/2 tsp honey
3 Tbsp extra virgin olive oil
1/4 cup freshly grated Parmesan cheese


Serve with your favorite natural sausages.  I used Aidells Roasted Garlic and Gruyere Cheese Smoked Chicken Sausage.  Yummo!!! (If casings are a problem, just remove them from the sausage by slicing down the side.)
