Summer Soup and Cheese Fondue


 
It's summer and veggies are growing in my garden.  This is a quick and easy meal to throw together and use up the fresh produce that you find all around in the summer.


Summer Soup:

1 peeled English cucumber
2 cloves garlic
1/4 tsp pepper
1/2 tsp salt
2 scallions
1 yellow sweet pepper cut into moderate pieces
1/2 cup homemade yogurt
1/4 cup water
1 T olive oil


Place all the ingredients in a blender and blend until smooth.  Place in fridge until you are ready to serve.  Serve topped with halved cherry tomatoes and cheese or a dollop of creme fraiche. 


Cheese Fondue:

2 cups mild cheddar cheese freshly grated
1/4 cup Kitchen Basics chicken stock
1/4 tsp dried mustard
1/4 tsp dried garlic
1/8 tsp salt
a little freshly grated black pepper

Using a small saucepan, heat the broth until it starts to bubble.  Then add all the other ingredients.  Turn off the heat and whisk with a fork until blended.  Place in a small dip crock pot or fondue pot to keep warm for serving.  Have fresh veggies like carrots, broccoli, and celery to dip along with apples or some cubes of cooked chicken breast.
