Peanut Butter Cookies

I finally created a grain-free cookie that actually tastes chewy and crunchy like a regular cookie.  My family didn't notice anything different with the switching of ingredients.  Give it a try. :)

Peanut Butter Cookies
3/4 cup honey
1/2 cup butter
1/2 cup natural peanut butter
1 egg
2/3 cup coconut flour
1 1/4 tsp baking soda
1/4 tsp salt
1 tsp pure vanilla extract

Whip honey, butter, peanut butter and egg in mixer until light and fluffy (about 2 minutes). Stir in remaining ingredients. Heat oven to 350 and bake on parchment for 12-13 minutes or until golden brown. Let cool somewhat before removing. (By the way, I used the small sized cookie scoop)
