So I was making cookies to give to a friend when my family starts asking for some. Instead of torturing them with the tantalizing smells, I quickly tweaked the recipe to be SCD safe. Here they are.
Shortbread Sugar Cookies
1 cup blanched almond flour
3 Tbsp coconut flour
1/8 tsp salt
1/3 cup honey
1/2 cup butter cut into 1/2 inch pieces and softened
1 tsp pure vanilla extract
1 Tbsp creme fraiche
nutmeg for dusting on top
Mix the flours and salt in a stand mixer. Add butter a piece at a time until the mixture looks crumbly and sticky. Add the remaining ingredients. Refrigerate for 10-15 minutes. Using a small cookie scoop, place cookies on a parchment lined baking sheet. Sprinkle the top with freshly grated nutmeg. Bake at 375 for about 10 minutes or until they start to turn golden brown. Let cool.
