Here is a healthier twist on a classic meal. My kids love this. They call it "meat on the bone." It's a family favorite at our house.
Meat on the Bone
10 chicken legs
4 Tbsp melted butter
salt, pepper, garlic powder
Line a cookie sheet with parchment paper. Arrange the chicken legs. Drizzle with melted butter and sprinkle with spices. Cook using convection if possible. This creates a wonderful crispy outside and juice inside. On convection 400 these take 30 minutes...for non convection 400 it will take 40-50 minutes.
Mashed Sweet Potatoes
3 sweet potatoes peeled and cut into chunks
1/4 cup creme fraiche or homemade yogurt (if you want lower fat)
1/2 cup shredded cheddar cheese (or 2% cheddar for lower fat)
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
Boil the potatoes in water until tender, about 10 minutes. Drain and add remaining ingredients. Mash using your favorite method...I use a hand blender. Top with chopped chives.
